BRIAN LAMB CHOP MARINADE Ingredients 2 Tbsp.
olive oil 1 lb. boneless skinless chicken breast, cut into ½” cubes (about 7-inch boneless wings) 1 tsp.
cumin 1 tsp.-salt, to taste 1 Tbsp., freshly grated lemon zest, to flavor 1/2 cup chicken broth 2 Tbs.
dried rosemary, to serve 1 clove garlic, minced 1/4 cup minced scallions, thinly sliced 1 cup chopped fresh ginger, to garnish Directions Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper and spray with nonstick spray.
Add the oil, garlic, ginger, scallies, and garlic.
Place the chicken in a large bowl, and drizzle with olive oil.
Toss well to coat, and season with salt, rosemary and garlic salt.
Transfer the chicken to a cutting board and season generously with salt and pepper.
Tuck the wings in tightly, and use a fork to gently pull the wing apart to loosen the skin.
Place on a sheet pan lined with parchment or wax paper.
Drizzle with the remaining olive oil, and top with lemon juice.
Sprinkle with crushed red pepper flakes, and serve. 3.2.2802
